Potato & Corn Bake
Serves 2
- 2 cups of scrubbed chopped potatoes
- 1/4 cup of spring onions or finely chopped onions
- 1 small stick of celery chopped
- 1/2 cup of peas or diced beans
- 1/2 corn kernels
- freshly chopped parsley
- 1/2 tsp of paprika
- 1 cup mustard white sauce
Preparation: 35 min
Cook: 25 min
- Steam potatoes and peas or beans until tender.
- Mix in all other ingredients except paprika and bake at 200°C for 20 minutes or until golden brown.
- Top with extra parsley.
