Potato & Corn Bake

Serves 2

  • 2 cups of scrubbed chopped potatoes
  • 1/4 cup of spring onions or finely chopped onions
  • 1 small stick of celery chopped
  • 1/2 cup of peas or diced beans
  • 1/2 corn kernels
  • freshly chopped parsley
  • 1/2 tsp of paprika
  • 1 cup mustard white sauce

Preparation: 35 min

Cook: 25 min

  1. Steam potatoes and peas or beans until tender.
  2. Mix in all other ingredients except paprika and bake at 200°C for 20 minutes or until golden brown.
  3. Top with extra parsley.
