Naan

Makes 18 - 20.

  • 6 cups Spelt flour
  • ½ tsp Salt
  • 1 tbs Yeast
  • 1 - 1½ cups Water luke warm
  • 3 tbs Olive oil
  • ½ cup Soy yoghurt

  1. Sift flour and salt together into a large bowl.
  2. In a smaller bowl cream yeast with yoghurt, oil and water and set aside.
  3. Combine the creamed mixture with the flour and knead until a soft dough is formed.
  4. Turn out the dough onto a lightly floured surface and kneed well until smooth and elastic.
  5. Let rise in a warm place until doubled in size.
  6. Preheat oven to 230 degrees. Place 2 or 3 heavy baking trays in oven to heat.
  7. Turn dough onto lightly floured surface and knock back.
  8. Divide into 18 - 20 equal pieces, make into oval shapes and roll flat with rolling pin.
  9. As naans are made, place onto hot baking tray and bake until golden brown.
  10. Cool on wire racks.
