Naan
Makes 18 - 20.
- 6 cups Spelt flour
- ½ tsp Salt
- 1 tbs Yeast
- 1 - 1½ cups Water luke warm
- 3 tbs Olive oil
- ½ cup Soy yoghurt
- Sift flour and salt together into a large bowl.
- In a smaller bowl cream yeast with yoghurt, oil and water and set aside.
- Combine the creamed mixture with the flour and knead until a soft dough is formed.
- Turn out the dough onto a lightly floured surface and kneed well until smooth and elastic.
- Let rise in a warm place until doubled in size.
- Preheat oven to 230 degrees. Place 2 or 3 heavy baking trays in oven to heat.
- Turn dough onto lightly floured surface and knock back.
- Divide into 18 - 20 equal pieces, make into oval shapes and roll flat with rolling pin.
- As naans are made, place onto hot baking tray and bake until golden brown.
- Cool on wire racks.
